Foil baking dish with baked spicy macaroni and cheese

I love a good Mac n cheese. It's a MUST for every large gathering with friends or family. The perfect big batch dish for any occasion. It's also something that can be tweaked with new ingredients to create fun flavor combinations!

This spicy macaroni and cheese recipe brings together al dente elbow macaroni enveloped in a velvety rich blend of Swiss and Pepper Jack cheeses. Decadent creaminess with a hint of fiery spices. The combination of creaminess and kick bring a fun twist to this classic comfort food.

Baking dish with cooked macaroni, measuring cup of milk, bowl of cubed cheese, bowl of cooked spinach, stick of butter, bowl of flour, and a can of diced green chillies.

The mild diced green chilies also give this recipe a bold zesty pepper flavor without adding more heat. The Pepper Jack cheese and green chilies combined provide a great flavor without overwhelming young palates. This balanced approach means both kids and adults can enjoy this comforting dish together! If you are looking to really crank up the heat, try using spicy green chilies instead.

Finally, the addition of spinach makes me not feel bad for eating several helpings of this Mac n cheese. It's got veggies in it, right? Spinach is rich in vitamins and minerals such as iron, calcium and vitamin K. That makes this a delicious AND nutritious side dish option.
